The facility ("BOLT Ultimate Sea Coaster") will be built by Maurer Rides (Munich Germany-based company) specializing in roller coaster design and manufacturing. The race track has length 244 m (800 ft), with twists, turns, drops and speeds up to 64 kph (40 mph). Carnival's roller coaster is all-electric and allows 2 riders to race along in motorbike-like vehicles at height 57 m (187 ft) above the sea. Mardi Gras offers guests close to 20 excellent bars and lounges onboard. Rudi Sodamin’s multi-course dining experience is phenomenal and well worth the $49 per-person charge. Seafood entrées include crab stuffed lobster tail, roasted halibut, crab cake, dover sole, and grilled colossal shrimp. Mardi Gras is divided into six different zones that incorporate themed elements and spaces for hosting activities and events, over 20 dining options, and nearly the same number of bars and lounges.
The ship has a Japanese specialty restaurant (named Bonsai Teppanyaki) located within the Bonsai Sushi restaurant (on Promenade-Havana Deck). The restaurant offers authentic Far East dishes and a live cooking show performance (by the chefs) at custom-built cooking stations positioned at the center of an 8-seat dining table. Each meal at Bonsai Teppanyaki starts with a sampling of 5 appetizers (Miso Soup, Pork Belly Yakitori, Spicy Tuna on Rocks).
